Quick and easy Coronation Chicken

Coronation chicken simple, easy and great for using up your leftover chicken. It is perfect when hosting for large groups as people can help themselves and decide whether they want it in a wrap or served with green salad and rice. A delicious combination of shredded chicken, creamy mayo, almonds, herbs and spices, this recipe is a summer winner at BBQs and picnics. It also makes a great light lunch when served with a salad or in a wrap.

Ingredients:

- Shredded chicken meat from a medium sized Sutton Hoo Chicken (or leftovers from your roast).
- 3 tablespoons of mayonnaise
- 2 teaspoons of madras curry powder
- 1/2 teaspoon of cinnamon
- Ground black pepper
- 1 tablespoon of mango chutney
- A small handful of sultanas
- 1 shallot, finely chopped
- Coriander leaves, finely chopped
- Handful of toasted sliced almonds to garnish

Method:

  1. Mix the mayonnaise, curry powder and cinnamon together in a large salad bowl. Season with black pepper and mix in the sultanas and chutney.

  2. Add the shredded Sutton Hoo chicken meat to the bowl and mix well.

  3. Serve any way you like: with salad and new potatoes, with rice, as a topping for a baked potato or a filling for a wrap or sandwich.
